Oven Roasted Chicken with Herbs

Oven Roasted Chicken with Herbs is a classic homemade recipe passed down through generations. With crispy skin and juicy meat, this dish is simple, comforting, and perfect for Sunday lunch or family gatherings.

Ingredients

  • 1 whole chicken (about 1.5 kg / 3 lb)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste
  • 1 lemon (optional)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Pat the chicken dry with paper towels.
  3. Rub olive oil all over the chicken.
  4. Season with garlic, rosemary, thyme, salt, and pepper.
  5. Place the chicken in a roasting pan.
  6. If desired, place the lemon halves inside the chicken cavity.
  7. Roast for 1 hour and 15 minutes, or until golden brown and fully cooked.
  8. Remove from the oven and let rest for 10 minutes before carving.
